Where is the playlist.m38u and .ts files created on the server?

I've done complete searches of the OS on both a Windows and Ubuntu install, and I can't find where these files are stored.

Do you mean disk cache location? It located in /var/cache/nimble on Linux and Program Files\Nimble Streamer\cache on Windows.
You can change it by specifying cache_path parameter in nimble.conf file (located in /etc/nimble on Linux and Program Files\Nimble Streamer\conf on Windows).
But disk cache is used for restreaming and VOD purposed; if you asking about files for live streaming - it stored in RAM cache and doesn't placed on disk.

Oh, I see. Live stream was the playlist in question.

Thanks, Denis! Nimble streamer is amazing, by the way! I'm trying to get my workplace to adopt it in our daily live news feed.

Keep up the great work!

Thanks for your praise, Patrick, we appreciate it.
If you want to store live streams on disk, you can use DVR feature:
Content is stored in m4a/m4v files, but you can convert it to mp4 as discussed in this topic:
